Head Baker, Darsham, Suffolk – VACANCY FILLED

I am delighted to be partnering with Two Magpies bakery to recruit a Head Baker. A permanent, full time role with a salary of up to £45,000 per annum plus benefits and relocation.

Having opened their doors in 2012 baking has been at their hearts ever since. From small beginnings they now have a central bakery, bake school and five bakery cafes.

With a team of over one hundred bakers, pastry chefs and baristas they bring expertise and passion to what they do best – transforming quality ingredients into delicious products and putting customer service first.

The business now has even more ambitious growth plans, and this role will be critical to these. Having also recently appointed a new Managing Director you will play a big part of the team to ensure the business remains at the top of its game and delivers on these plans.

As the Head Baker, you will be responsible for operating the baking section of the operation with responsibility for creating high quality bakery products and maintaining quality standards and consistency of products. Leading the baking operation, you must train and supervise your team and ensure they use proper baking techniques.

In addition, you will also be required to plan production and have a creative and enthusiastic flair to create new menu suggestions and seasonal offerings.

Responsibilities:

  • Manages all day-to-day operations of the bakery operation
  • Prepare a wide variety of baking products following traditional and modern recipes.
  • Able to produce all baked goods including but not limited to artisan breads and rolls, muffins, laminated croissants and doughnuts etc.
  • Able to develop, design, or create innovative ideas and items.
  • Create new and exciting seasonal products to engage the interest of customers.
  • Ensure excellent quality throughout all products.
  • Follows proper handling and right temperature of all food products.
  • Coordinates activities of bakers and workers engaged in preparation.
  • Checks the quality of raw and cooked food products to ensure that standards are met.
  • Monitor stocks for baking ingredients such as flour, sugar etc. and make appropriate orders within budget.
  • Check quality of material and condition of equipment and devices used for cooking.
  • Report all equipment problems and maintenance issues, known safety hazards, or unsafe practices and procedures immediately.
  • Attends all scheduled employee meetings and brings suggestions for improvement.
  • Able to recognise superior quality products, presentations, and flavours.
  • Maintains cleanliness and organisation in all work areas.
  • Encourages and builds mutual trust, respect, and cooperation among team members.
  • Serves as a role model to demonstrate appropriate behaviours.
  • Ensure compliance with food hygiene and Health and Safety standards.
  • Guide and motivate bakers to work more efficiently.

Requirements:

To succeed in the role, you will have a proven track record from a genuine artisan bakery and have experience with various hand-crafted bread including specialist knowledge of sour dough.

You will be able to manage the day-to-day tasks involved within bakery production and effectively supervise a team of bakers. You must possess a positive attitude and can work with a variety of people and in cooperation with co-workers efficiently and effectively.

As the operation is 24/7 you will also be required to work initially a a variety of shifts including weekends, days, afternoons, and evenings, however longer term there will be option for you to establish your own work pattern.

The role would suit someone who has already been a head baker or indeed someone who wants to ‘step up’ from their current senior baker position and take more responsibility. Equally it could also suit someone who is currently working in a technical or quality focused role utilising the same techniques used in bakery production.

The role offers a salary of £45,000 + benefits + relocation if required and the fantastic opportunity to be part of the business as it embarks on its future growth plans.
